Tuscan Tortellini Soup

Once in a great while my extreme cooking pays off in the form of a successful recipe and I end up with nothing short of a small miracle; a dinner that everyone loves. This one happened a while back, but I’ve managed to repeat the process successfully a few more times. Also a small miracle that I remembered what I did the first time. Each time it remains a hit with all the boys, a rarity these days, so I thought I’d share the recipe with you tonight.

5-6 cans beef broth

1 package Jimmy Dean Sage flavored sausage (this is my preference because of the nice flavor it adds)

2 carrots – minced

1 onion – minced

3T butter

1 can kidney beans

2 cans Italian stewed tomatoes

1C uncooked small cheese tortellinis

Brown sausage. In a large soup pot combine broth, tomatoes, beans and browned sausage. In the same pan used for the sausage, saute carrot and onion in butter until onion is clear. Add to soup pot. Add tortellini about 6-10 minutes before serving (follow cooking directions on package).

I like this because it’s a very easy, filling soup that you can make ahead or freeze for future “instant” dinners. (YAY)

  1. Note: if you don’t have the Jimmy Dean Sage sausage, use regular sausage and add a little rubbed sage and salt to the recipe.
